Overview Position: We are a well-known, busy fine dining, à la carte restaurant in Perth.
You will be reporting to the director to ensure the smooth running and professional management, and the commercial performance of the kitchen, as well as the brand.
Duties:
- Plans menus and estimates food and labour costs.
- Discusses with the owner/restaurant manager and all staff regarding Events and Functions to keep the kitchen prepared.
- Organises, prepares and cooks food, prepares different menu items, including Australian, Italian, continental & Indian dishes.
- Prepares sauces, accompaniments and soups and portions food on plates and adds sauces and garnishes as required.
- Freezes and preserves foods, regulates the temperatures of ovens, grills and other cooking equipment and examines foodstuffs to ensure quality.
- Selects and trains staff and demonstrates required cooking techniques to cooks and kitchen hands, and mentors them on cooking procedures.
- Cleans and maintains kitchen premises and follows workplace hygiene procedures and regulations.
- Maintains a refrigeration log book. Follows workplace health and safety procedures, including applying first aid if necessary.
- Follow the daily, weekly and monthly maintenance Schedule for all Equipment in the Kitchen.
- Maintain Kitchen stock inventory and order all Food supplies as per the order Schedule.
- Adhere to all System Operating Procedures (SOP)
- Prepare and cook food according to customers' orders.
- Please note that we are a FINE DINE restaurant, and every item on the menu is made after the order is received and the KOT is generated inside the kitchen. We do not have a Bain-Marie in the kitchen, and every item is À la carte.
- Introducing new menu items regularly will be a task. This includes: Weekly specials, combo planning, Planning and implementing vegan and gluten-free menus, planning new drinks (non-alcoholic), constantly planning, adding and updating the menu based on local requirements and ingredients available at all times.
